Garlic Shrimp
with Thai Salsa

SALSA INGREDIENTS
  • 1 large ripe mango, peeled, seeded, and chopped
  • 2 green onions (white part only), chopped
  • 1/4 cup of fresh basil leaves, chopped
  • 2 garlic cloves, minced
  • 1 Tbsp. of Carlson Cod Liver Oil, lemon flavor
  • 1 Tbsp. of extra virgin olive oil
  • 2 Tbsp. of lemon juice
  • Salt and pepper to taste 

SALSA DIRECTIONS
  1. ​Combine all ingredients in a bowl, and mix well.
  2. Cover and refrigerate until ready to serve. 

SHRIMP INGREDIENTS
  • 1 dozen large shrimp, shelled and deveined
  • 2 Tbsp. of garlic, minced
  • 1 1⁄2 tsp. of sugar or 3⁄4 tsp. of fructose
  • 4 tsp. of canola oil
  • 4 green onions, chopped
  • 1 tsp. of fresh ginger, minced
  • 2 Tbsp. of fresh cilantro leaves, chopped
  • Salt and pepper to taste

SHRIMP DIRECTIONS
  1. ​Mix shrimp, garlic, salt, pepper, and sugar in a bowl.
  2. Heat olive oil over high heat in a wok or skillet.
  3. When oil is hot, add shrimp mixture, and stir-fry quickly until shrimp turn orange-pink, about 1-2 minutes.
  4. Add green onions and ginger; stir-fry for an additional 30 seconds.
  5. Remove shrimp from olive oil, and sprinkle with fresh cilantro.
  6. Remove Thai Salsa from refrigerator, and use as a dip for Garlic Shrimp.
