Soba Noodles
with Honey Ginger Peanut Sauce


Serves 4

INGREDIENTS
1 8-oz. package of soba noodles
2 cups of bite-sized broccoli florets, lightly steamed
1 small red bell pepper, thinly sliced
1/2 cup of scallions, thinly sliced
1/2 cup of peanuts, divided and chopped
1/4 cup of cilantro, chopped
1/3 cup of soy sauce
2 Tbsp. of sesame oil
4 tsp. of Carlson The Very Finest Fish Oil, lemon flavor
2 Tbsp. of peanut butter
1 Tbsp. of grated ginger
2 Tbsp. of rice wine vinegar
2 Tbsp. of honey
2 cloves of garlic, minced
1-2 tsp. of red pepper flakes 

DIRECTIONS
  1. Prepare noodles as directed on package.
  2. Drain well, and place into a large bowl.
  3. Add broccoli, bell pepper, scallions, half of the peanuts, and half of the chopped cilantro.
  4. In a small bowl, whisk together soy sauce, sesame oil, Carlson The Very Finest Fish Oil, lemon flavor, peanut butter, ginger, vinegar, honey, garlic, and red pepper flakes.
  5. Add to noodle mixture and toss thoroughly to coat.
  6. Garnish with remaining chopped peanuts and cilantro sprigs.
  7. Great served warm or cold.
